America's Chefs Black Bean Chili
Yield - 12 cups

Ingredients

2 cups of Oberto Original Beef Jerky, chopped no bigger than half inch pieces
pound of chopped slab bacon or platter style thick cut bacon
lb. of Andouille sausages , chopped into inch slices
1 large onion, chopped
2 cloves garlic, minced
2 Anaheim or Poblano chili peppers with stems & seeds removed & chopped
1 to 4 Jalapeno peppers with stems & seeds removed & diced
1 - 4 oz. can roasted green chili , rinsed
5 cups of fresh tomatoes peeled and chopped
1/4 cup of cilantro finely chopped with stem removed
1 Bottle of Modelo Negro or other dark beer
1 can of beef broth
1 & 1/2 tsp of garlic powder
2 Tbsp of chili powder (or more to taste)
2 Tbsp of light brown sugar
1 Tbsp of cumin
1 tsp of paprika
1/2 tsp of pepper (or more to taste)
4 cans or cups of black beans ,cooked & drained
* For extra spicy chili add lb. of hotlinks sausage sliced into inch pieces
How to make it:
Cook bacon until fat is rendered but not crisp
Add onion and garlic, cook until tender - about 5 minutes
Add chili peppers, tomatoes and beef broth
Cook until tomatoes are soft - about 20 minutes
Combine chili powder, brown sugar, cumin, paprika and pepper - add to pot
Stir in beef jerky then cover with dark beer
Cook at a simmer or slow boil for 45 minutes then add sausage & black beans, bring to a boil and cook for 5 more minutes
